Ingredients:

1 dozen large egg yolks

1 quart 1/2 & 1/2

1 1/2 cups sugar

1/3 cup semi sweet morsels

1/4 teaspoon almond extract

1/8 cup finely chopped almonds (about 14)

2-3 drops green foood coloring

1/4 cup maraschino cherry juice

10 maraschino cherries chopped

Directions:

Spumoni is an Italian triple flavor ice cream like neopolitan but instead includes cherry, almond and chocolate. It will be 3 batches of ice cream each done separately, and the 3 frozen flavors are then all put in the same serving dish next to each other. All three ice creams start the same way then are flavored differently at the end. This works well because each batch makes almost 3 cups, which is about as much as my double boiler can hold.

READ all directions before starting. It will help you understand better.

1. In a double boiler or a bowl on top of a pan with boiling water scald 1 1/3 cups 1/2 & 1/2. Add 1/2 cup sugar and a pinch of salt and mix to dissolve. Beat 4 egg yolks until fluffy. Using a 1/4 cup measuring cup slowly add half of the cream mixture to egg yolks and whisk. This tempers the eggs so they don't scramble. Pour the whole egg/cream mixture back into the double boiler and cook, whisking constantly until it thickens slightly and coats the back of a spoon.

2. Pour into a cold bowl. Add almond extract and green food coloring. Stir until combined and chill to 40 degrees. Add chopped almonds and prepare ice cream according to your machine's directions. Put on one side (1/3) of a rectangle container.

3. Repeat step 1. Place the chocolate chips in a bowl. Pour cream mixture over chips, and it will melt the chocolate chips. Stir until combined and chill to 40 degrees. Prepare ice cream according to your machine's directions. Put in the middle 1/3 of the container next to the almond ice cream.

4. Repeat step 1. Pour into a cold bowl. Add cherry juice and chopped cherries. Stir to combine and chill to 40 degrees. Prepare ice cream according to your machine's directions. Put in the last 1/3 of a the container next to the chocolate ice cream.

About this Recipe:

Don't let the quart of 1/2 & 1/2 and the full dozen eggs deter you. You should be able to buy those items for $4 or so and - You can make angel food cake or meringue with the egg whites! This will be a wonderful ice cream worth every penny. You can stetch it and make more by adding up to 1 cup of milk per batch to the cream and prepare from there. It won't be quite as rich but it will still be very good.
