Mom's Classic Cheesecake

16 graham crackers
1/4 lb butter
2 8oz. packages cream cheese
1 cup granulated sugar
2 eggs
2 tsp. vanilla
1 pint sour cream
Pulse the graham crackers in the food processor until crumbed. Mix with the the butter and press into the bottom of a 7 ½" x 12" pan.

Cream 2 pkgs cream cheese. Add ½ cup sugar, 2 eggs and 1 tsp. vanilla. Pour cream cheese mixture over crust. Bake in 350° oven for 25 minutes.

Mix 1 pint sour cream, ½ cup sugar and 1 tsp. vanilla. Do not overmix. Spread on top of prepared cheesecake and bake again at 475° for 5 minutes.

Cool before serving.
