Marie's Chicken

Ingredients:
1 whole chicken cut up and skinned
1/4 cup olive oil
2 large carrots chopped
2 stalks celery chopped
1 small onion diced
2 cloves garlic chopped
2 cups good red wine
2 cups beef stock
1 tablespoon brown sugar
3 tablespoons cornstarch

Directions:
Heat oil in Dutch oven and cook carrots, celery and onioins for about 10 minutes. Add garlic and cook 2 more minutes. Add wine to the vegetables and let it boil until it reduces by ½. Stir in the beef stock and brown sugar. Place all the chicken into the mixture bone side up and cover. Cook in 300° oven for 1½ hours.

Transfer the chicken to a plate - maybe on a bed of lightly buttered pasta, rice or mashed potatoes and keep warm by covering with a foil tent.

Strain the vegetables out and return juice to the pot on medium heat. In a cup mix 3 tablespoons water with 3 tablespoons cornstarch until all lumps are gone. Mix the cornstarch mixture to the pot of juice and keep stirring until it thickens into a nice sauce. Pour over chicken platter.
