Quick Broccoli cheese soup
• 6 Tbl Butter
• 1/4 sweet onion finely chopped
• 1/4 cup flour
• 4 cups chicken stock
• 16 oz frozen chopped broccoli
• 1 cup milk
• 4 oz sharp cheddar (or your choice)
Melt butter in 2 quart pot. Add onions and saute until tender. Add flour and cook for about 5 minutes. Add chicken stock and mix with flour mixture. Add 3/4 bag of broccoli and bring to boil. Reduce temp and puree with immersion blender or in regular blender in batches. Add the remaining broccoli, milk & cheese. Cook until hot through. Serve.
