Sauteed Kale

Ingredients:

One bunch of green, curly kale

1 1/2-2 tablespoons extra virgin olive oil

2 small cloves fresh garlic, peeled &; pressed (or finely chopped)

1/4 c. sunflower kernels or pine nuts

Freshly grated Parmesan Cheese

Salt &; pepper to taste

Directions:

Remove stems and spine from kale with knife. Chop leafy greens and rinse well in collander. Heat oil in 12" non-stick pan over medium heat, ad garlic to oil and sautee until golden, add kale and toss with tongs until tender (personal choice how tender), add sunflower kernels, salt &; ;pepper ;and toss to dispurse through. Place in serving bowl and top with Parmesan.

This recipe is so easy, fresh and delicious. If you like green vegetables at all it's worth a try. Kale is very inexpensive and so nutricious!
