Sauteed Kale

One bunch of green, curly kale
1 1/2-2 tablespoons extra virgin olive oil
2 small cloves fresh garlic, peeled & pressed (or finely chopped)
1/4 c. sunflower kernels or pine nuts
Freshly grated Parmesan Cheese
Salt & pepper to taste
Remove stems and spine from kale with knife. Chop leafy greens and rinse well in collander. Heat oil in 12" non-stick pan over medium heat, ad garlic to oil and sautee until golden, add kale and toss with tongs until tender (personal choice how tender), add sunflower kernels, salt & pepper and toss to dispurse through. Place in serving bowl and top with Parmesan.
This recipe is so easy, fresh and delicious. If you like green vegetables at all it's worth a try. Kale is very inexpensive and so nutricious!
