Peanut Butter Round Ups

Ingredients:
1 cup shortening
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 cup peanut butter
2 cups all purpose flour
1/2 tsp. salt
2 tsp. baking soda
1 cup quick rolled oats
Directions:
Beat shortening and sugars together until light and fluffy. Add eggs and beat well. Blend in peanut butter. Mix together flour, salt and baking soda. Stir into butter mixture. Stir in oats.

Roll dough to form small balls and place on ungreased cookie sheets. Press each cookie with the tines of a fork - 2 times, perpendicularly to make a criss cross design.

Optional: Before baking sprinkle granulated sugar on top to make them sparkle. Bake in 350 degree oven about 12 minutes. Yield 6 dozen yummy cookies.

About this Recipe:
My maternal grandma made these and sent them to me in care packages when I was in college. They are great peanut butter cookies - crispy and chewy too. You won't be able to eat just one!
